  • Category : Noodles & Dumplings
  • Ingredient Category : Rice
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 300g Garae-tteok (thick rice cakes), cut into bite-sized pieces
  • 100g Beef (e.g., bulgogi cut)
  • 3 Shiitake mushrooms
  • 1/4 Onion
  • 1/2 Green bell pepper
  • 1/2 Red bell pepper

Seasoning Sauce

  • 2 Tbsp Soy sauce
  • 2 Tbsp Sugar
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Sesame oil

Cooking Instructions

Step 1

Prepare all your ingredients. If your garae-tteok are long, cut them into bite-sized pieces (about the length of your middle finger) so they are easy for children to eat. (Tip: If the rice cakes are hard, briefly blanch them in boiling water for a softer texture.)

Step 1

Step 2

Slice all the ingredients. Julienne the green and red bell peppers into strips about 0.5cm thick. Slice the onion, shiitake mushrooms, and beef into thinner strips than the bell peppers. In a separate bowl, mix all the seasoning sauce ingredients (2 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp sesame oil).

Step 2

Step 3

Rinse the sliced garae-tteok under running water a couple of times. Then, add 2 tablespoons of the prepared seasoning sauce and gently mix to coat the rice cakes. This step helps the rice cakes absorb the flavors beautifully.

Step 3

Step 4

Marinate the shiitake mushrooms and beef separately with 2 tablespoons each of the seasoning sauce, mixing well. (Tip: Let the marinated rice cakes, mushrooms, and beef sit for about 10 minutes to allow the flavors to meld. While they are marinating, you can slice the remaining vegetables, saving you time.)

Step 4

Step 5

Heat a pan over high heat. Add the marinated beef and shiitake mushrooms and stir-fry quickly. It’s important to cook until the surface of the beef changes color.

Step 5

Step 6

Once the beef has changed color, add the marinated rice cakes, sliced onion, green bell pepper, and red bell pepper to the pan.

Step 6

Step 7

Finally, add the remaining seasoning sauce and stir-fry everything together until well combined. Continue to cook until the rice cakes become soft and chewy. (Tip: If the mixture seems too saucy, continue to stir-fry until the excess liquid evaporates to your desired consistency.)

Step 7

Step 8

Sprinkle with sesame seeds for a final touch, and your delicious ‘Sumi’s Side Dishes’ style Tteok Japchae is complete! Enjoy the chewy rice cakes, the variety of vegetable textures, and the perfect sweet and savory balance.
