The chewy whelk, tender oyster mushrooms, and a hint of spice come together for a delightful experience that’s perfect for a quick and impressive lunch or dinner.
Main Ingredients- 4 Tbsp pre-cooked Korean whelk meat
- 100g oyster mushrooms
- 7 cloves garlic
- 1 Cheongyang pepper (or other mild chili pepper)
- 100g spaghetti (for 1 serving)

- 1 Tbsp salt (for pasta water and seasoning)

Cooking Instructions
Step 1
In a large pot, bring 750ml of water to a rolling boil. Add 1 Tbsp of salt to the water. Salting the pasta water is crucial for flavorful pasta.
Step 2
Once the water is vigorously boiling, carefully add 100g of spaghetti (1 serving). Gently push the pasta down to ensure it’s fully submerged, then start your timer precisely. Refer to the package instructions for the recommended cooking time, typically around 8-10 minutes.
Step 3
While the pasta is cooking, prepare the other ingredients. For the oyster mushrooms, trim the tough bottom ends and then gently pull them apart into individual strands. For the garlic, trim off the hard root end of each clove and slice them thinly into 2-3 pieces. Slice the Cheongyang pepper diagonally into 6-7 pieces. (Feel free to add more if you like it spicier!)
Step 4
About 3 minutes after you started cooking the pasta, thinly coat a wide pan with cooking oil and heat it over medium heat. Add the whelk meat, sliced garlic, sliced chili pepper, and 1 Tbsp of oyster sauce. Begin sautéing until fragrant, stirring frequently to prevent burning.
Step 5
After another 3 minutes of pasta cooking (total of 6 minutes elapsed), push the ingredients in the pan to one side. Drain the cooked spaghetti and add it directly to the pan. Add the remaining 1 Tbsp of oyster sauce and about 6 Tbsp of the pasta cooking water (starchy water). Add the prepared oyster mushrooms. Increase the heat to high and stir-fry everything together for another 3 minutes until well combined. Ensure the pasta water emulsifies with the sauce.
Step 6
Turn off the heat and continue to stir and toss the pasta in the residual heat for about 1 minute. This helps the sauce coat the noodles perfectly, completing your delicious chewy and spicy whelk and oyster mushroom pasta! Serve immediately while hot.
