Ingredients

  • Rice noodles for 2 servings (approx. 200g)
  • 1/3 cucumber
  • A little bit of carrot (julienned)
  • A little bit of lettuce or other greens (like romaine or iceberg)

Seasoning Sauce

  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Soy sauce
  • 1/2 Tbsp Minced garlic
  • 1 Tbsp Vinegar (adjust to your preference)
  • 1 Tbsp Sugar (adjust to your preference)
  • 1 Tbsp Maesil Cheong (Korean plum syrup)
  • 1/3 Tbsp Sesame oil
  • 1/2 Tbsp Sesame seeds

Cooking Instructions

Step 1

First, bring a generous amount of water to a rolling boil in a pot. Once boiling, add the rice noodles and cook according to the package instructions, typically for about 4 minutes and 30 seconds. Rice noodles have a chewier texture than regular somen, so be careful not to overcook them.

When the noodles start to bubble up and overflow, pour in about 1/3 cup of cold water and bring it back to a boil. Repeat this process of adding cold water twice more (for a total of 3 additions of cold water). This technique will make the noodles perfectly chewy and springy, with a satisfying bite.

Drain the cooked rice noodles in a colander and rinse them quickly under cold running water. Rinsing removes excess starch, resulting in a cleaner and chewier texture. Drain them thoroughly to remove excess water and set aside.

Place the prepared rice noodles into a large mixing bowl or a wide basin. Gently separate the noodles so they don’t stick together.

Add the julienned cucumber and carrot, along with the prepared greens, to the bowl. Now, add all the delicious seasoning sauce you’ve made. Combine the gochujang, soy sauce, minced garlic, vinegar, sugar, and plum syrup to create the sauce, then generously spoon it over the noodles and vegetables. Gently mix everything together by hand until well combined, being careful not to mash the vegetables. This is the key to a perfect bibim guksu!

Finally, drizzle a little sesame oil for a nutty aroma and sprinkle with sesame seeds to finish. Sesame oil really elevates the flavor of bibim guksu, so don’t skip it! Mix well and enjoy your delicious bowl of noodles immediately.
