Cooking Instructions
Step 1
First, let’s prepare the main ingredients for our tteokbokki: the garaetteok (thick rice cakes), fish cakes, and green onions for aroma.
Step 2
Cut the prepared ingredients into bite-sized pieces. Slice the garaetteok into lengths of about 5-7cm, similar to regular tteokbokki rice cakes. Cut the fish cakes into pieces about 3-4cm. Slice the green onion diagonally.
Step 3
Now, let’s make the heart of our delicious tteokbokki: the sauce! Pour 400ml of water into a pot. Add 2.5 tablespoons of gochugaru (Korean chili flakes). (If you prefer it spicier, feel free to increase the amount of gochugaru.)
Step 4
Add 2 tablespoons of gochujang (Korean chili paste) for that essential spicy kick. Stir gently to dissolve the paste, then bring the mixture to a boil.
Step 5
Once the sauce starts boiling, add the sliced garaetteok. Then, add 1.5 tablespoons of soy sauce for basic seasoning and 1 tablespoon of soup soy sauce (or anchovy sauce) to enhance the umami flavor.
Step 6
Sweetness is key to balancing the flavors of tteokbokki! Add 2 to 3 tablespoons of sugar. You can adjust the amount of sugar according to your preference. (It’s recommended to start with 2 tablespoons and add more after tasting.)
Step 7
When the rice cakes become soft and the sauce has thickened slightly, add the sliced fish cakes and green onions. Simmer for another 1-2 minutes. This allows the delicious flavors from the fish cakes and green onions to meld into the tteokbokki sauce.
Step 8
Finally, taste the tteokbokki. If it’s not salty enough, add a little more soy sauce. If you desire more sweetness, add some rice syrup (oligosaccharide) or sugar. Once all the flavors are perfectly harmonized, your delicious tteokbokki is ready!
Step 9
Enjoy your homemade tteokbokki made with chewy garaetteok, following this wonderful recipe inspired by Baek Jong-won! A warm and delicious bowl of tteokbokki at home is truly a treat!
