  • 2 Tbsp perilla oil (deulgireum)
  • 3 Tbsp gochugaru (Korean chili powder, adjust to taste)
  • 2 Tbsp minced garlic
  • 1.5 Tbsp soy sauce (jin-ganjang)
  • 1 Tbsp oyster sauce
  • 1 Tbsp cooking wine (mirin or rice wine)
  • 1 Tbsp ginger syrup (optional, can omit if unavailable)
  • 2 Tbsp perilla seed powder (deulkkaegaru)
  • A pinch of sesame seeds
  • A pinch of black pepper

First, prepare the 2 portions of Chalsundae. Carefully slice the sundae into bite-sized pieces, making sure the casing doesn’t burst. It’s best to choose sundae that is suitable for stir-frying, as cooking times can vary by type.

Wash the fresh perilla leaves thoroughly and pat them completely dry. Slice them into manageable pieces, about 2-3 cm wide. Ensuring the leaves are dry is crucial to prevent the dish from becoming watery during cooking.

Prepare half a medium eggplant. Eggplant adds a nice texture and readily absorbs the sauce. While not essential, it enhances the overall dish if you have it. You can omit it if you prefer. Slice the eggplant into pieces similar in size to the perilla leaves.
