Delicious Side Dish Using Songyi Mushrooms
Experience a unique texture different from shiitake mushrooms! Here’s a simple recipe for a delicious stir-fried dish using the distinctively textured Songyi mushroom. It’s perfect as a side for rice or even for entertaining guests!
Main Ingredients- 10 Songyi mushrooms (cleaned)
- 1/4 onion (thinly sliced)
- 1 Tbsp scallion (finely chopped)
- 2/3 Tbsp minced garlic
- 1/2 Tbsp sesame oil
- 1 Tbsp sesame seeds
- A little cooking oil (for stir-frying)
- A pinch of black pepper
Seasoning- 1/2 Tbsp oyster sauce
- 1/2 Tbsp oyster sauce
Cooking Instructions
Step 1
First, trim the tough ends of the Songyi mushrooms. Lightly rinse them under running water, drain any excess moisture, and then slice them lengthwise or into bite-sized pieces. Thinly slice the onion as well. Try to match the slicing thickness of the onion to the mushrooms for a harmonious texture after cooking.
Step 2
Finely chop the scallion to add a fragrant aroma. Adding the chopped scallion towards the end of cooking will enhance its flavor and freshness.
Step 3
Heat about 1-2 tablespoons of cooking oil in a pan over medium-low heat. Once the oil is shimmering, add the minced garlic and stir-fry until fragrant, being careful not to burn it. The aroma of garlic should become noticeable before moving to the next step.

Add the prepared Songyi mushrooms to the pan and stir-fry over medium heat. Some moisture might be released from the mushrooms, but continue to stir-fry until they turn lightly golden brown. This process enhances their flavor and creates a delightful chewy texture.

Once the mushrooms are partially cooked, add the sliced onion and oyster sauce. Stir-fry quickly to combine. Oyster sauce adds a rich umami flavor, and it’s best to cook the onion just until it softens slightly while retaining some crispness. Avoid overcooking, as the onion can become mushy.

Finally, add the chopped scallion, sesame oil, and a pinch of black pepper. Stir-fry briefly to ensure all ingredients are well combined. Toss everything together quickly as you add these final seasonings.
