  • 1 piece of dried kelp (about 5cm square)
  • 1 Cheongyang pepper (adjust to your preference)

Soy Sauce Marinade

  • 150ml soy sauce
  • 2 Tbsp cooking wine (mirin, etc.)

Prepare 2 fresh eggs. Carefully crack the eggs and separate only the yolks. You can use the egg whites for other dishes. Gently place the separated yolks into a heat-resistant container or glass jar, ensuring they do not touch each other, so they maintain their shape. It’s important to handle them delicately to prevent the yolks from breaking.

In a small pot, combine 150ml of soy sauce, 1 piece of dried kelp, and 1 Cheongyang pepper, thinly sliced diagonally. (The Cheongyang pepper adds a spicy kick, but you can omit it or adjust the amount if you don’t prefer spicy food.) Bring the mixture to a boil over medium-low heat, then let it simmer for about 1 minute before turning off the heat. The kelp will impart umami, and the pepper’s aroma will infuse the soy sauce.

Allow the heated soy sauce mixture to cool slightly. It doesn’t need to be completely cold, just cool enough so that steam is no longer rising significantly. Slowly pour the slightly cooled soy sauce over the egg yolks placed in the container. Ensure the yolks are fully submerged in the soy sauce mixture for even marination.

Close the container tightly and refrigerate for 3 days to marinate. You can gently flip the yolks once halfway through the marination process to ensure the soy sauce coats them evenly. After 3 days, take out the marinated egg yolks, place them generously over a bowl of rice, and drizzle with a drop or two of sesame oil for added nutty flavor. It’s also delicious wrapped in seaweed or mixed into rice.
