Main Ingredients- 4 cups whole garlic cloves (approx. 600g)
- 5 Tbsp cooking oil
- 4 slices of thinly sliced fresh ginger
- 2 dried red chilies
Savory Braising Sauce- 8 Tbsp water
- 4 Tbsp soy sauce
- 6 Tbsp cooking wine (mirin)
- 6 Tbsp corn syrup (or rice syrup)
- 2 Tbsp sesame oil
- 3 Tbsp sesame seeds
- 8 Tbsp water
- 4 Tbsp soy sauce
- 6 Tbsp cooking wine (mirin)
- 6 Tbsp corn syrup (or rice syrup)
- 2 Tbsp sesame oil
- 3 Tbsp sesame seeds
Cooking Instructions
Step 1
First, heat a frying pan over medium heat and add 5 tablespoons of cooking oil. Add the 4 cups of whole garlic cloves, which have been peeled and trimmed, and stir-fry over high heat until the garlic turns golden brown. The key is to cook the garlic until its pungent flavor mellows and a nutty aroma develops.
Step 2
Once the garlic is lightly browned, add the 4 slices of thinly sliced ginger and the 2 dried red chilies, cut into small pieces. Stir-fry everything together until fragrant and lightly toasted. This step infuses the garlic with the aromatic qualities of ginger and chili, enhancing the overall flavor. Be mindful of the heat to prevent burning.
Step 3
When the garlic is beautifully golden, reduce the heat to medium. Pour in 8 tablespoons of water and 4 tablespoons of soy sauce along the sides of the pan. This allows the ingredients to combine well and helps the sauce evenly coat the garlic.
Step 4
Now, add 6 tablespoons of cooking wine (mirin) for gloss and depth of flavor, and 6 tablespoons of corn syrup for sweetness. Stir everything together to combine the sauce with the garlic. Let it simmer gently over medium-low heat until the sauce thickens and becomes syrupy. Make sure to stir occasionally to prevent the sauce from sticking to the bottom of the pan.
Step 5
Once the sauce has thickened and coated the garlic with a chewy texture, turn off the heat. Stir in 2 tablespoons of sesame oil and 3 tablespoons of sesame seeds. Mixing them in at the end preserves their aromatic flavor. Your delicious braised garlic is now ready!
