Main Ingredients

  • Frozen ‘Pinecone’ Squid 320g
  • Whole Garlic Cloves 5
  • Korean Green Chili Pepper 1

Seasoning Ingredients

  • Soy Sauce 3 Tbsp
  • Brown Sugar 2 Tbsp
  • Oligosaccharide (Corn Syrup) 1 Tbsp
  • Water 3 small soju cups (approx. 180ml)
  • Cooking Wine (Mirin or Rice Wine) 2 Tbsp

Cooking Instructions

Step 1

First, combine all the soy sauce braising ingredients (3 Tbsp soy sauce, 2 Tbsp brown sugar, 1 Tbsp oligosaccharide, 3 soju cups water, 2 Tbsp cooking wine) in a pot and mix well. Once the sauce is well combined, bring it to a rolling boil over medium heat. It’s important to let the sauce boil until the sugar dissolves and the flavors meld.

As the sauce begins to boil, lightly rinse the frozen squid under running water, pat it dry, and add it directly to the boiling sauce. Using plump ‘pinecone’ squid will enhance the chewy texture.

Once the squid is simmering in the sauce, prepare the next ingredients. Braising over medium-low heat, rather than high heat, will ensure the squid remains tender and not tough.

Wash the whole garlic cloves and cut them in half. Remove the stems from the Korean green chili pepper, cut it in half, remove the seeds, and thinly slice it into strips. If you like it spicy, you can leave the seeds in. Adjust the amount of chili pepper to your preference.

Add the prepared garlic cloves and sliced green chili pepper to the pot together. Adding vegetables at this final stage adds fresh aroma and flavor.

Stir the squid, vegetables, and sauce with a spatula or spoon, stirring occasionally, until the sauce becomes glossy and coats the squid beautifully. Adjust the heat to ensure the sauce adheres well to the squid and develops a delicious color. Be careful not to over-braise, as the squid can become tough.
