Gompi seaweed is rich in dietary fiber, making it excellent for gut health. We’ll cover everything from how to prepare the seaweed to making a flavor-packed anchovy-based dipping sauce that’s a wonderful alternative to the typical chili-vinegar sauce. Gompi Wrap Ingredients- 1 large sheet of Gompi seaweed
Cooking Instructions
Step 1
Rinse the salted Gompi seaweed under running water until clean. Then, carefully place it in boiling water and blanch for about 1-2 minutes, or until it turns a vibrant green color. Be careful not to overcook, as it can become mushy.
Step 2
Transfer the blanched Gompi seaweed to cold water and rinse thoroughly at least 3 times. Gently rub the seaweed as you rinse to remove any hidden sand or impurities. You can also run your hand down the seaweed from top to bottom.
Step 3
Cut the cleaned Gompi seaweed into bite-sized pieces. Today, we’ll use one large sheet for wraps. If you have extra, you can chop it finely for a Gompi seaweed salad later. It’s also helpful to neatly arrange any leftover bits.
Step 4
Now, let’s make the special dipping sauce that will enhance the flavor of your Gompi wraps! Instead of the usual sweet and spicy chili-vinegar sauce, we’ll prepare a rich, savory anchovy-based sauce. First, finely mince the onion, green onion, and Cheongyang chili peppers.
Step 5
Here’s a quick tip for mincing the green onions! Make crosswise cuts on the surface of the chopped green onion, then finely chop them. This method makes mincing much easier and ensures the ingredients blend well into the sauce for a more delicious result.
Step 6
In a bowl, combine the minced green onion (about 2 inches), minced Cheongyang chili peppers (1), minced onion (approx. 2 Tbsp), anchovy sauce (2 Tbsp), water (3 Tbsp), gochugaru (1/2 Tbsp), crushed sesame seeds (1/2 Tbsp), sesame oil (1 Tbsp), and minced garlic (1/2 tsp). Mix everything well. Taste and adjust seasoning as needed.
