Cooking Instructions
Step 1
Let’s start by making the dough. In a large bowl, combine the all-purpose flour and sweet rice flour. Make a well in the center. Add the yeast, salt, and sugar around the edges, ensuring they don’t directly touch each other, then lightly mix the dry ingredients.

After lightly combining the dry ingredients, pour in the corn syrup and warm water (around 40°C or 104°F). Be careful not to use water that is too hot, as it can kill the yeast.

Now, knead the dough with your hands until it forms a smooth, elastic ball. This usually takes about 5-7 minutes of consistent kneading. Once the dough is well-kneaded, add the black sesame seeds and mix them in thoroughly. Shape the dough into a smooth ball, cover the bowl with plastic wrap or a damp cloth, and let it rest.

We will now let the dough proof in a warm place. You can use your oven’s proofing function, or place the dough bowl in a microwave along with a cup of hot water. Let it proof for about 30 minutes. Properly proofed dough will increase in size by about 1.5 to 2 times.

Carefully gather the edges of the flattened dough over the filling, sealing them together. Think of it like closing a dumpling. Pinch the seams tightly to ensure the filling is completely enclosed and shape it into a round ball. A good seal is crucial to prevent the filling from bursting out during cooking.

Finally, it’s time to cook! Heat a frying pan over medium-low heat and add a generous amount of vegetable oil (about 4 tablespoons). Carefully place the shaped hotteok into the pan, seam-side down. Cook over low heat until the bottom is golden brown. Then, flip the hotteok, use a spatula to gently press it down, and continue cooking until both sides are golden brown and crispy.
