A recipe for delicious handmade Gamja Ongsimi, featuring a chewy texture and a savory broth. It’s the perfect warm and comforting soup for a chilly day!
Main Ingredients- Handmade Gamja Ongsimi (or store-bought) for 1 serving
- 1/4 carrot
- 1/4 onion
- 1 shiitake mushroom
- 1/8 small cabbage
- 2 Cheongyang peppers (Korean chili peppers)
- 1L water (or 1L anchovy-kelp broth)

Cooking Instructions
Step 1
First, prepare your Gamja Ongsimi. If making from scratch, you’ll shape pieces from mashed potato dough. Alternatively, use store-bought Gamja Ongsimi. (For homemade, mash boiled potatoes with starch to form a dough, then pinch off pieces.)
Step 2
Pour 1,000ml of water (or 1,000ml of anchovy-kelp broth) into a pot. Using a 250ml cup, four cups will accurately measure 1,000ml.
Step 3
While the broth is heating, prepare the vegetables. Thinly slice the carrot, onion, shiitake mushroom, and cabbage into similar sizes. Finely chop the 2 Cheongyang peppers.
Step 4
Once the water in the pot comes to a rolling boil, reduce the heat to medium. Carefully add the prepared Gamja Ongsimi to the pot. Stir gently to prevent the pieces from sticking together.
Step 5
When the Gamja Ongsimi begins to float to the surface, add all the prepared carrot, onion, shiitake mushroom, and cabbage to the pot.
Step 6
After adding the vegetables and the soup returns to a boil, stir in the finely chopped Cheongyang peppers. Feel free to add more if you enjoy a spicier kick.

Season the soup by gradually adding soup soy sauce. Start with a small amount and adjust to your taste, adding more if it’s too bland. Finish with salt if necessary.

Once the Ongsimi and vegetables are tender and cooked through, turn off the heat. The Ongsimi typically cooks in about 5-7 minutes.
