I absolutely love mushrooms and tend to buy various types regularly. This time, I accidentally bought shiitake mushrooms without realizing I already had some at home! With only a soup prepared and no side dishes, I decided to make this stir-fry. To my surprise, the chewy texture and savory flavor were so delicious, it felt like I was eating meat, and I finished a whole bowl of rice in no time. Let’s make this simple yet incredibly tasty shiitake mushroom stir-fry together!
Main Ingredients- 5 Shiitake Mushrooms (approx. 150g)
- 1/2 Onion
- 1/3 Carrot (small size)
- 2 Tbsp Perilla Oil (Deulgireum)
- Chopped Green Onion, to taste
- 1 Tbsp Olive Oil
- 1 Tbsp Sesame Oil
Sauce- 1 Tbsp Soy Sauce
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Cooking Wine (Mirin or Cheongju)
- 1 Tbsp Oyster Sauce
- 1 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, prepare all your ingredients meticulously. Trim the stems from the 5 fresh shiitake mushrooms and slice them about 0.5cm thick for a pleasant bite. Wash and peel the 1/2 onion and 1/3 carrot, then slice them into fine julienne strips similar in thickness to the shiitake mushrooms. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 Tbsp cooking wine, and 1/2 Tbsp minced garlic. Mix well to create your delicious sauce in advance. This sauce will add a wonderful savory depth to your dish.

Now, let’s start stir-frying. Heat a pan over medium heat and add 2 Tbsp of fragrant perilla oil. Add the chopped green onions and sauté them to release their aromatic oil. Stir-fry the green onions until they turn a light golden color, being careful not to burn them, then proceed to the next step.

Shiitake mushrooms tend to absorb oil quickly, so to ensure the vegetables stir-fry smoothly without sticking or becoming dry, add an extra 1 Tbsp of olive oil. Stir-fry the vegetables together so the olive oil is well incorporated. This step helps soften the vegetables and enhance their flavors.

Once the onions become translucent and the vegetables are partially cooked, pour the pre-mixed sauce into the pan. Continue to stir-fry over medium heat, ensuring the sauce coats the vegetables evenly. Avoid high heat at this stage.

To allow the sweetness of the onions, the chewiness of the shiitake mushrooms, and the savory notes of the sauce to meld beautifully, reduce the heat to low. Continue to stir-fry slowly and patiently, ensuring the sauce doesn’t burn. Stirring constantly is key to allowing the flavors to penetrate each ingredient deeply.

When the sauce has coated all the ingredients well and they have a glossy appearance, turn off the heat immediately. Finally, drizzle 1 Tbsp of sesame oil over the stir-fry to add a nutty aroma and rich flavor. Give it a final gentle toss using the residual heat. This final touch elevates the overall taste and fragrance of the dish.
