This time, I decided to create a delightful salad featuring these versatile mushrooms. The combination of fresh greens and perfectly roasted mushrooms is incredibly appetizing and makes for an excellent brunch or light dinner.

Salad Ingredients

  • 1/2 head of crisp lettuce (washed thoroughly and drained)
  • 2 king oyster mushrooms (medium-sized)
  • 1/2 medium onion (for a touch of sweetness)

  • 1 Tbsp sweet and tangy balsamic glaze
  • 1/2 Tbsp savory whole grain mustard

Place the sliced onions in a bowl of cold water and let them soak for about 10 minutes. This process mellows their sharp bite while keeping them crisp, making them a perfect addition to salads. Now, it’s time to prepare the star of our salad: the king oyster mushrooms. Slice the king oyster mushrooms into about 0.5 cm thick pieces, suitable for eating. In a separate bowl, toss the sliced mushrooms with a tiny pinch of salt and 1 Tbsp of olive oil. Gently mix them to coat. This seasoning step helps to enhance the mushrooms’ natural flavor.

Arrange the seasoned king oyster mushrooms in a single layer in your air fryer basket. Roast them at 180°C (350°F) for 15 minutes until they are beautifully golden brown. Flipping them halfway through ensures even cooking. Freshly roasted mushrooms offer a wonderfully chewy texture and a rich, nutty flavor. If using a conventional oven, bake at 180°C (350°F) for 15-20 minutes.
