- 500g fresh ark clams
- 2 handfuls of perilla leaves (about 100g)
Special Sauce Ingredients
- 2 Tbsp soy sauce
- 1 tsp oligosaccharide
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp chopped green onions
- 1 Tbsp chopped cheongyang peppers (optional, for extra spice)
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds (or ground sesame seeds)
- 1 Tbsp rice wine (mirin or similar)
- 2 Tbsp soy sauce
- 1 tsp oligosaccharide
- 1 Tbsp minced garlic
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp chopped green onions
- 1 Tbsp chopped cheongyang peppers (optional, for extra spice)
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds (or ground sesame seeds)
- 1 Tbsp rice wine (mirin or similar)
Cooking Instructions
Step 1
First, rinse the ark clams thoroughly under running water. Bring a pot of water to a boil, add the cleaned clams, and cook just until one or two begin to open. Avoid overcooking, as they can become tough! Drain the cooked clams, let them cool slightly, then carefully shuck them. Rinse the clam meat clean and set aside.
Step 2
Let’s make the special sauce that will bring this bibimbap to life! In a bowl, combine 2 Tbsp soy sauce, 1 tsp oligosaccharide, 1 Tbsp minced garlic, 1 Tbsp gochugaru, 2 Tbsp chopped green onions, 1 Tbsp chopped cheongyang peppers (if using), 1 Tbsp sesame oil, 1 Tbsp sesame seeds, and 1 Tbsp rice wine. Mix well until everything is evenly incorporated. Feel free to adjust the soy sauce and oligosaccharide to your taste.
Step 3
Chop the fragrant perilla leaves into pieces similar in size to the clam meat. Bring a pot of water to a boil with a pinch of salt. Add the chopped perilla leaves and blanch for just 10-20 seconds. Blanching them briefly will help maintain their crisp texture.

Immediately rinse the blanched perilla leaves under cold water to stop the cooking and cool them down. Squeeze out as much water as possible by hand. Place the perilla leaves in a separate bowl, add a pinch of salt, 1 tsp sesame seeds, and 1 tsp sesame oil. Gently toss to lightly season. This step enhances the perilla’s fresh aroma.
Step 5
Heat a non-stick pan over medium heat and add a little sesame oil. Add the shucked clam meat and stir-fry for about 30 seconds. Pour in the prepared special sauce and continue to stir-fry over medium-low heat for about 2 minutes, allowing the sauce to coat the clams beautifully.
