A nutritious and delicious homemade side dish made by braising chewy king oyster mushrooms in a sweet and savory soy sauce-based sauce. It’s a true rice thief!
Main Ingredients- 350g King Oyster Mushrooms
- 1/2 Red Chili Pepper
- 2 Cheongyang Chili Peppers
Golden Ratio Braising Sauce- 2 Tbsp Oyster Sauce
- 3 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Rice Wine)
- 1 Tbsp Honey (or Corn Syrup)
- 1 Cup Water (200ml)
- 2 Tbsp Oyster Sauce

Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly and pat them dry. Slice them lengthwise into approximately 0.5cm thick strips. Remove the stems from the red and Cheongyang chili peppers and slice them into 2-3 pieces, removing the seeds. (Tip: You can add other favorite mushrooms like shiitake or oyster mushrooms along with the king oyster mushrooms. However, enoki mushrooms tend to fall apart easily, so it’s best to omit them in this recipe.)
Step 2
In a small pot or frying pan, combine 3 Tbsp soy sauce, 2 Tbsp oyster sauce, 1 Tbsp honey, 1 Tbsp mirin, and 1 cup of water. Mix them well. Add the prepared red and Cheongyang chili peppers to the pot. Bring the braising liquid to a rolling boil over high heat.
Step 3
Once the braising liquid starts boiling, add all the sliced king oyster mushrooms. Reduce the heat to medium-low and simmer until the sauce has reduced by about half. (Tip: The mushrooms will release moisture, which might increase the volume of the sauce initially. Don’t worry! Keep stirring and simmering; the mushrooms will absorb the delicious seasoning, developing a deep flavor. Simmer for about 10-15 minutes.)
Step 4
When the sauce has almost thickened and the mushrooms are glossy, turn off the heat. Your King Oyster Mushroom Jorim is ready! It’s delicious served warm, or you can let it cool and store it in the refrigerator for an even more developed flavor. Enjoy this tasty side dish with your rice!
