  • 2 Potatoes (medium-sized)
  • 1 Cheongyang pepper
  • 2 cloves Garlic

1. Rinse the konjac thoroughly under running water, then cut it into bite-sized pieces (about 2-3 cm). This is an important step to remove its characteristic odor.

2. Peel the potatoes and cut them into pieces similar in size to the konjac. Uniform thickness ensures they cook at the same rate.

3. Finely mince the garlic. Seed the Cheongyang pepper and finely chop it. Adjust the amount of pepper to your preference for spiciness.

4. Blanch the cut konjac in boiling water for about 1 minute. This step improves its texture, making it less mushy, and further eliminates any odor.

5. Drain the blanched konjac and immediately rinse it under cold water to cool it down. This helps achieve a pleasantly chewy texture.

6. In a pot or deep pan, add 1 cup (200ml) of water, the prepared konjac, and the piece of kombu. Kombu adds a lovely umami flavor. (Remove the kombu later.)

7. Now, it’s time for the seasoning. Add the minced garlic, chopped Cheongyang pepper, 2 Tbsp soy sauce, 1 Tbsp mirin, and 2 Tbsp sugar. Mix well.

8. Once the seasoning mixture begins to boil, add the cut potatoes and stir to coat them evenly with the sauce. The potatoes will absorb the flavors and become delicious.

9. Cover with a lid or leave uncovered and simmer over medium-low heat for about 10 to 15 minutes, or until the konjac and potatoes are tender and the sauce has thickened. Stir occasionally to prevent sticking.
