Cooking Instructions
Step 1
Lightly rinse the salted seaweed stems under cold water once, then soak them in water for about 10 minutes to remove excess salt. This helps to achieve a balanced saltiness and tenderize the stems.
Step 2
Rinse the seaweed stems thoroughly under cold running water to completely remove any remaining salt, then drain them in a colander. Cut them into bite-sized pieces, about 3-4 cm long. Thinly julienne the carrot and slice the onion into similar-sized strips.
Step 3
Heat 2 Tbsp of vegetable oil in a pan over medium-low heat. Add the minced garlic and sauté slowly until fragrant. Be careful not to burn the garlic; stir until it turns a light golden brown.
Step 4
Once the garlic is lightly golden, add the drained seaweed stems and stir-fry for about 2-3 minutes. Then, add the julienned carrots and onions and stir-fry until they become translucent. Pour in 1 Tbsp of soy sauce to add flavor.
Step 5
Add 1 Tbsp of plum extract for sweetness and a glossy finish. Incorporate 1 Tbsp of fish sauce (or Korean soup soy sauce) to enhance the umami. Finally, add 1 Tbsp of cooking wine (Mirin) to remove any potential gaminess and add depth of flavor.
Step 6
Stir everything together until well combined. Just before turning off the heat, sprinkle in 1 Tbsp of sesame seeds and drizzle 1 Tbsp of sesame oil. Give it a quick stir to finish the delicious stir-fried seaweed stems.

This stir-fried seaweed stem dish is so delicious that it becomes a ‘rice thief’! Making a generous batch means you can enjoy it over several meals without getting tired of it.
