Main Ingredients- 300g prepared seaweed stems
- 1/2 medium onion
- 2 stalks green onions (scallions)
- 1/6 medium carrot
- 2/3 Tbsp minced garlic (approx. 10g)
Cooking Instructions
Step 1
First, it’s crucial to remove the saltiness from the seaweed stems. Place the seaweed stems in a bowl and cover with cold water. Let them soak for about 20 minutes. Changing the water once or twice during this time will help further.
Step 2
While the seaweed stems are soaking, let’s prepare the other ingredients. Thinly slice the onion, and cut the green onions into 3-4cm lengths. Slice the carrot thinly; this adds a nice color to the dish.
Step 3
After 20 minutes, rinse the soaked seaweed stems under clean running water two to three times. This step thoroughly removes any remaining salt.
Step 4
Drain the rinsed seaweed stems completely using a colander. If there’s excess water, the stir-fry can become watery.
Step 5
Cut the seaweed stems into bite-sized pieces. If they are too long, they can be difficult to stir-fry or eat. Aim for pieces around 5-7cm in length.
Step 6
Now, let’s start stir-frying! Prepare a wok or a deep skillet. First, add the sliced carrots and onions. Then, drizzle in a generous amount of cooking oil.
Step 7
Set the heat to high and stir-fry quickly for about 1 minute. This process slightly softens the vegetables and enhances their flavor.
Step 8
Add the minced garlic. Garlic can burn easily, so it’s best to add it after stir-frying the vegetables.
Step 9
Sauté briefly for about 10-15 seconds until the garlic becomes fragrant. Be careful not to overcook, as the garlic can burn.
Step 10
Add the prepared seaweed stems to the pan. From this point on, heat control is important.
Step 11
Turn the heat back up to high and stir-fry for about 1 minute until the seaweed stems soften. Make sure to stir constantly to prevent sticking.
Step 12
Add the Dasida (seasoning powder) for an umami boost. If you don’t have it, you can omit it or substitute with a little soy sauce.
Step 13
Stir-fry quickly for about 10-15 seconds after adding the Dasida to ensure the seasoning is evenly distributed.
Step 14
Finally, add the green onions for color and a fresh aroma.
Step 15
Stir-fry the green onions for just about 10-15 seconds. The key here is to keep them slightly crisp.
Step 16
Add the sugar to bring a hint of sweetness. You can adjust the sweetness to your preference.
Step 17
Reduce the heat to medium and continue to stir-fry for another minute. This allows the sugar to dissolve and all the ingredients and seasonings to meld together beautifully.
Step 18
Turn off the heat, and generously sprinkle in the sesame seeds for a nutty aroma and flavor.
Step 19
Gently toss everything together with a spatula until well combined. Your delicious stir-fried seaweed stems are ready!
Step 20
Transfer the finished stir-fried seaweed stems into a container. Enjoy this wonderful homemade side dish with your meal!
