Main Ingredients

  • 1 pack (approx. 300g) salted sea mustard stems
  • 1/2 onion
  • 1/6 carrot

Seasoning

  • 1 Tbsp minced garlic
  • 0.5 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Prepare 1 pack (approx. 300g) of salted sea mustard stems, usually purchased from supermarkets or markets. Since salted sea mustard stems are preserved in salt, it’s crucial to rinse them thoroughly under running water about 3 times, shake off excess salt, and then soak them in cold water for 15-20 minutes to remove the saltiness. This process helps control the salt level and preserves the original chewy texture of the sea mustard stems.

Step 1

Step 2

After soaking in cold water, squeeze out as much moisture as possible from the sea mustard stems with your hands. Then, cut them into two equal pieces for easier eating. Cutting them into manageable lengths is recommended as they can be cumbersome to stir-fry if too long.

Step 2

Step 3

Thinly slice the 1/2 onion and julienne the 1/6 carrot into similar lengths. It’s best to slice the vegetables thinly so they blend well with the sea mustard stems and provide a pleasant crispness.

Step 3

Step 4

Lightly oil a preheated pan and add 1 tablespoon of minced garlic. Stir-fry over low heat to release the subtle aroma of the garlic. Be careful not to burn the garlic and cook it slowly over low heat.

Step 4

Step 5

Once you can smell the garlic, add the julienned carrots and onions. Stir-fry together for about 1 minute and 30 seconds. The key is to stir-fry just until the vegetables soften slightly while retaining their crispness.

Step 5

Step 6

Add the squeezed sea mustard stems to the pan and continue to stir-fry for another 3 minutes. Stir-frying the sea mustard stems sufficiently helps to eliminate any fishy odor and enhances their chewy texture. It’s better to stir-fry over medium-low heat rather than high heat.

Step 6

Step 7

Now, add 0.5 tablespoon of soy sauce and stir-fry quickly over low heat for about 30 seconds to ensure the seasoning is evenly distributed. Be mindful not to overcook the soy sauce, as it can burn.

Step 7

Step 8

Just before turning off the heat, generously sprinkle in 1 tablespoon of sesame oil and 1 tablespoon of toasted sesame seeds. The nutty aroma from the sesame oil and seeds will further enhance the flavor of the stir-fried sea mustard stems.

Step 8

Step 9

Plate the deliciously prepared stir-fried sea mustard stems, and you’ll have a satisfying side dish that complements a bowl of rice perfectly! Enjoy this hearty side dish.
