King Oyster Mushroom Stir-Fry: Incredibly Delicious with a Satisfyingly Chewy Texture!
This recipe features king oyster mushrooms, pan-fried until golden brown, then coated in a savory and slightly spicy gochujang sauce. It’s a delightful dish with a wonderful chewy texture.
Main Ingredients- 1 pack King Oyster Mushrooms (approx. 300g)
- A small amount of Green Onion
- A pinch of Sesame Seeds
- A little Cooking Oil
Seasoning Ingredients- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy Sauce (brewing soy sauce)
- 1 Tbsp Corn Syrup (or Rice Syrup)
- 1 Tbsp Minced Garlic
- 2 Tbsp Water
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy Sauce (brewing soy sauce)
- 1 Tbsp Corn Syrup (or Rice Syrup)
- 1 Tbsp Minced Garlic
- 2 Tbsp Water
Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly under running water. Pat them completely dry with paper towels or a clean cloth. Trim off the very end of the stem, then slice each mushroom into three equal pieces lengthwise. Slicing them this way helps the sauce penetrate better and creates a more enjoyable texture.
Step 2
Now, let’s prepare the delicious sauce. In a small bowl, combine 1 Tbsp gochugaru, 2 Tbsp gochujang, 3 Tbsp soy sauce, 1 Tbsp corn syrup (or rice syrup), 1 Tbsp minced garlic, and 2 Tbsp water. Whisk everything together until well combined, ensuring there are no lumps. We’ll add the sesame seeds at the end, so don’t include them yet.
Step 3
Heat a lightly oiled pan over medium-high heat. Add the prepared king oyster mushrooms. Stir-fry them until they turn a nice golden brown. As they cook, the mushrooms will release some moisture; continue cooking until this moisture evaporates and the mushroom surfaces develop a slightly brownish hue. This process enhances their chewy texture and flavor. Once nicely browned, transfer the mushrooms to a separate plate.
Step 4
In the same pan, pour in the prepared sauce. Reduce the heat to medium-low. Once the sauce begins to bubble, let it simmer for a short while to deepen its flavors.

When the sauce is gently simmering, add the browned king oyster mushrooms back into the pan.

Using a spatula, toss the mushrooms and sauce together until evenly coated. Continue to stir-fry for about 1-2 minutes, allowing the sauce to fully absorb into the mushrooms.
