Main Ingredients- 1 cup dried acorn jelly
- 2 mini bell peppers (use various colors for visual appeal)
- 1 Korean green chili pepper (optional, for a spicy kick)
- 2 dried shiitake mushrooms
- A pinch of sesame seeds (for garnish)
Stir-Fry Sauce- 1.5 Tbsp soy sauce
- 0.5 Tbsp brown sugar
- 0.5 Tbsp corn syrup or rice syrup
- 3 Tbsp water
- 0.5 Tbsp perilla oil (deulgireum)
- 1.5 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare all your ingredients. Wash and slice the vegetables.
Step 2
Soak the dried acorn jelly in cool water for about 20 minutes until it becomes soft and pliable. This step helps rehydrate the jelly and remove any bitterness.
Step 3
Rehydrate the dried shiitake mushrooms in warm water, then squeeze out excess moisture. Thinly slice the mini bell peppers and the Korean green chili pepper (deseeded if preferred). Slice the rehydrated shiitake mushrooms similarly.
Step 4
Bring a pot of water to a boil. Add the soaked acorn jelly and blanch for exactly 2 minutes. Overcooking can make the jelly mushy. Immediately rinse the blanched jelly under cold water to stop the cooking and remove excess starch. Drain thoroughly in a colander.
Step 5
In a small bowl, combine the soy sauce, brown sugar, corn syrup, water, and perilla oil. Stir well until the sugar is completely dissolved to create the flavorful stir-fry sauce.
Step 6
Heat a pan over medium heat. Add the drained acorn jelly and the prepared stir-fry sauce. Once the sauce comes to a rolling boil, cook for about 1 minute, allowing the jelly to absorb the flavors. Then, add the sliced bell peppers, green chili pepper, and shiitake mushrooms.
Step 7
Continue to stir-fry for another 30 seconds until everything is well combined and heated through. Garnish with a sprinkle of sesame seeds just before serving. Your delicious and chewy stir-fried dried acorn jelly is ready!
