How to Make Delicious Pan-Fried Oyster Mushrooms with a Satisfyingly Chewy Texture
My refrigerator was running low on side dishes, so I’ve been busy making some new ones. Today, I made a simple side dish using oyster mushrooms, which are easily found at the grocery store. Their chewy texture makes them incredibly tasty.
Ingredients- 2 packs Oyster Mushrooms (approx. 400g)
- 1 Tbsp Perilla Oil (Deulgireum)
- 1 Tbsp Cooking Oil
- 1 Tbsp Minced Garlic
- 5 Tbsp Soy Sauce (Jinganjang)
- 1 Tbsp Toasted Sesame Seeds
- Pinch of Black Pepper
Cooking Instructions
Step 1
Gently rinse the oyster mushrooms under running water. You don’t need to scrub them; just a light rinse to remove any dirt or debris is sufficient. Be careful not to let them absorb too much water.
Step 2
Trim off the tough bottom ends of the cleaned oyster mushrooms with a knife. This helps them hold their shape better as they cook.
Step 3
Heat a pan over medium heat and add 1 tablespoon of cooking oil and 1 tablespoon of perilla oil. Add the prepared oyster mushrooms and stir-fry them briefly. The nutty aroma of the perilla oil will infuse the mushrooms, adding a wonderful depth of flavor.
Step 4
Once the mushrooms have softened slightly, add 1 tablespoon of minced garlic and 5 tablespoons of soy sauce. Oyster mushrooms release a lot of water when cooked, so today we’ll be cooking them down until the sauce is reduced and concentrated.
Step 5
As the mushrooms cook, you may notice some foam forming from the released liquid. Skim this off gently with a spoon. Continue to cook over medium-low heat, allowing the liquid to evaporate and the sauce to reduce until it’s almost completely absorbed. Stir occasionally to prevent sticking.
Step 6
When most of the liquid has evaporated and the ingredients are well combined, increase the heat slightly and stir-fry for another 1-2 minutes. This step is crucial for achieving that satisfyingly chewy texture, ensuring all excess moisture is gone.
Step 7
Turn off the heat. Stir in 1 tablespoon of toasted sesame seeds and a pinch of black pepper, to your liking. Mix well to distribute evenly. The addition of sesame seeds adds a final touch of nutty flavor.
Step 8
Your delicious pan-fried oyster mushrooms, with their chewy texture and savory flavor, are now ready. Enjoy them as a wonderful side dish with your meal!
