Dried Bean Sprouts and Carrot Stir-Fry
Introducing a healthy side dish, Dried Bean Sprouts and Carrot Stir-Fry, made with carefully dried bean sprouts and carrots, offering a wonderfully chewy texture and deep flavor. It’s nutty with every bite and makes an excellent side for rice or a lunchbox addition.
Ingredients- 500g soaked bean sprouts (pre-soaked and softened)
- 100g dried carrots (soaked in warm water)
- 6 cloves garlic, minced (or 1.5 Tbsp minced garlic)
- 2 Tbsp oyster sauce
- 2 Tbsp mentsuyu (soy sauce-based dipping sauce) (can substitute with 2 Tbsp soy sauce if unavailable)
- Pinch of black pepper
- 5 Tbsp olive oil
- 1 Tbsp sesame seeds (whole or ground)
Cooking Instructions
Step 1
First, soak the sun-dried bean sprouts in plenty of water until fully rehydrated. Once softened, blanch them briefly in boiling water, then rinse under cold water and squeeze out excess moisture. This process removes any toughness, resulting in a softer and chewier texture.
Step 2
Similarly, soak the dried carrots in warm water for at least 30 minutes until they become tender. Once softened, squeeze out the water. Properly rehydrating the carrots ensures a pleasant texture when stir-fried.
Step 3
Now, let’s begin stir-frying. Heat a pan over medium heat and add 5 tablespoons of olive oil. Allowing the pan to heat up sufficiently will help the ingredients cook evenly without burning.
Step 4
Add the minced garlic and the rehydrated carrots to the hot pan. Stir-fry until the garlic is fragrant and the carrots are slightly softened. The aromatic garlic and sweet carrots will create a delicious base for the dish.
Step 5
Once the garlic and carrots are partially cooked, add the blanched bean sprouts. Pour in 2 tablespoons of mentsuyu and 2 tablespoons of oyster sauce, mixing well to ensure the seasonings coat everything evenly. The umami from the oyster sauce will infuse into the bean sprouts and carrots, adding a deep flavor. Stir-fry over medium-low heat, being mindful of the heat to prevent the oyster sauce from burning.
Step 6
When all ingredients are well-seasoned and have reached a chewy consistency, sprinkle in a pinch of black pepper just before turning off the heat to eliminate any gamey odors. Drizzle in about 1 tablespoon of sesame oil for a nutty aroma and give it a final gentle mix to finish.
Step 7
Finally, transfer the finished bean sprouts and carrot stir-fry to a serving plate. Sprinkle with 1 tablespoon of whole or ground sesame seeds for garnish. The addition of nutty sesame seeds enhances both the visual appeal and the overall flavor. Enjoy your delicious meal!
