Today is the day we make tteokbokki, a favorite for the whole family! Honestly, I didn’t have a special plan to make tteokbokki, but thanks to some garaetteok (rice cakes) I unexpectedly found in the freezer, I ended up making delicious tteokbokki. It felt like a hidden treasure my mother had saved for herself! When I asked my mom, she mentioned it might be a bit old, but I felt it was a shame to waste, so I decided to transform it into tteokbokki. Thus, ‘Garaetteok Tteokbokki’! Since it had been a while since I made tteokbokki, I was a little worried about how it would taste, but wow! It was much more delicious than I expected. Am I boasting too much? My mom, who loves tteokbokki, even complimented it, saying it was as good as the ones bought from the market! (Of course, it’s a secret that she says everything I cook is delicious.) I seem to be talking a lot today. Now, enough chatter, let me guide you through the detailed steps to make this tasty garaetteok tteokbokki!
Main Tteokbokki Ingredients- 2 bars Garaetteok (Korean rice cake sticks)
- 3 sheets Square fish cakes
- 1/2 Onion
- 1/3 Korean green onion stalk
- 1 Anchovy-Kelp broth pack
- 800ml Water
Spicy and Sweet Seasoning- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy sauce
- 2 Tbsp Corn syrup or Oligosaccharide
- 2 Tbsp Sugar
- 2 Tbsp Fine Gochugaru (Korean chili flakes)
- 1 Tbsp Curry powder (for extra flavor!)
- 1/4 tsp Black pepper
- 1 Tbsp Toasted sesame seeds (for garnish)
- 3 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Soy sauce
- 2 Tbsp Corn syrup or Oligosaccharide
- 2 Tbsp Sugar
- 2 Tbsp Fine Gochugaru (Korean chili flakes)
- 1 Tbsp Curry powder (for extra flavor!)
- 1/4 tsp Black pepper
- 1 Tbsp Toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
First, wash the onion thoroughly and slice it into 1cm thick strips. Slicing it this way ensures a good texture and allows the sauce to penetrate well when cooked.
Step 2
Wash the green onion under running water, then cut it lengthwise in half and then into approximately 5cm lengths. This size helps release its flavor into the broth.
Step 3
Cut the garaetteok, the star of tteokbokki, into manageable pieces about 5cm long. It’s best to cut them to a moderate thickness so they don’t become too mushy when cooked.
Step 4
Slice the square fish cakes in half lengthwise, then cut them into approximately 2cm pieces. Fish cakes add a wonderful chewy texture that complements the rice cakes!
Step 5
Let’s make the delicious tteokbokki sauce! In a wide bowl, combine 2 Tbsp sugar, 2 Tbsp fine gochugaru, 1 Tbsp curry powder for extra flavor, and 1/4 tsp black pepper. Add 3 Tbsp soy sauce, 2 Tbsp corn syrup (or oligosaccharide), and 3 Tbsp gochujang for the base flavor. Mix everything thoroughly until smooth and well combined. Your golden ratio sauce is ready!
Step 6
In a pot, combine 800ml of water and the anchovy-kelp broth pack. Bring it to a boil over high heat. Once boiling, let it simmer for about 10 minutes to extract a deep flavor, then remove and discard the broth pack.
Step 7
Add the prepared sauce to the boiling broth and stir well until the clumps dissolve. It’s important to stir continuously to ensure the sauce is fully incorporated into the broth.
Step 8
As soon as the sauce broth begins to boil, add the prepared garaetteok and reduce to high heat to simmer rapidly. Stir occasionally to prevent the rice cakes from sticking together.
Step 9
Once the rice cakes start to soften and cook through, reduce the heat to medium and continue to simmer slowly. This step allows the sauce to evenly permeate the rice cakes.
Step 10
When the sauce has reduced to about 2/3 of its original volume and has thickened, add the prepared fish cakes. After adding the fish cakes, lower the heat to low and simmer gently. This slow simmering allows the fish cakes to absorb plenty of the delicious sauce.
Step 11
When both the rice cakes and fish cakes are cooked and the sauce has thickened to a desirable consistency, add the sliced onion and green onion. Simmer for a little longer, stirring as if stir-frying. The sweetness and aroma of the vegetables will further enhance the tteokbokki’s flavor.
Step 12
Once all ingredients are cooked to perfection and the delicious sauce has beautifully coated the rice cakes and fish cakes, turn off the heat. Garnish with 1 Tbsp of toasted sesame seeds for a nutty aroma. Your chewy garaetteok tteokbokki is complete! Enjoy your delicious meal.
