Make Hearty and Tasty Corn Rice Using Summer Corn!
Do you have boiled corn stored in your freezer that’s taking up space? Don’t worry! You can transform it into delicious corn rice, featuring the delightful pop of individual kernels and a rich, savory flavor. It’s incredibly easy to make with just a rice cooker, and freshly cooked corn rice is a wonderful meal on its own. Leftover rice can also be repurposed into a tasty fried rice. Now, enjoy a delightful corn rice dish with your frozen corn!
Main Ingredients- 5 frozen corn cobs (pre-boiled and frozen)
- Rice for 5 servings
Cooking Instructions
Step 1
Take the boiled corn that was stored in the freezer and soak it in cold water to thaw. Once thawed, cut the corn in half. Prepare to remove one row of kernels from the top where the kernels are attached.
Step 2
To easily separate the corn kernels, first remove one or two rows of kernels from the top by hand. Then, using your thumb, slide it down the cob to detach the kernels. This method allows you to easily separate the corn kernels.
Step 3
Soak the separated corn kernels in cold water for about 1 to 2 hours until sufficiently softened. If the kernels are still hard, you can soak them for longer. **Caution:** Soaking in warm or lukewarm water can make the corn kernels mushy or spoil them, so be sure to use cold water.
Step 4
Wash your desired amount of white or mixed grains rice thoroughly. When adding water to the rice cooker, add about 10-15% more water than you normally would. Corn kernels absorb moisture, so adding a little extra water prevents the rice from becoming mushy and ensures it cooks up fluffy.
Step 5
Evenly spread the soaked corn kernels over the washed rice in the rice cooker. Ensure the corn kernels are distributed uniformly across the rice.
Step 6
Close the rice cooker lid and cook the rice as usual. I used half of the corn kernels for cooking and stored the remaining half in an airtight container in the refrigerator. **Important:** Do not refreeze the corn kernels after washing or soaking them. If stored in the refrigerator, it’s best to use them within 3 days.
Step 7
Once the corn rice is cooked, gently fluff it with a rice paddle. The delightful popping texture of the corn kernels combined with the chewy rice creates a wonderfully savory and tender dish. Freshly cooked corn rice is excellent on its own, but leftover rice can be deliciously transformed into fried rice with kimchi or other ingredients, so be sure to try it!
