  • 40g chives
  • 1/2 block (150g) firm tofu
  • 2 eggs
  • 50g glass noodles
  • Rice paper wrappers

Seasoning & Others

  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 3-4 pinches salt

Cooking Instructions

First, boil 50g of glass noodles in boiling water for about 6 minutes. Once cooked, rinse them under cold water to remove excess starch and drain them thoroughly. Ensuring they are well-drained is key.

To the drained glass noodles, add 1 tsp of soy sauce and 1 tsp of sesame oil. You can also add a pinch of pepper and salt to taste. Gently mix them together, allowing the seasonings to be absorbed by the noodles.

In a bowl, combine the prepared firm tofu (make sure to squeeze out excess water), finely chopped chives, and 2 eggs. Add 1 tsp of soy sauce, 1 tsp of sesame oil, and a pinch of salt. Mix everything well, as if you’re making a batter, until all ingredients are evenly incorporated. Ensure the chives and tofu are broken up and blended smoothly.

Now, heat a non-stick pan over low heat. Place one sheet of rice paper on the preheated pan and spread a portion of the batter evenly over it. Arrange the seasoned glass noodles attractively on top of the batter.
