First, open your store-bought hotteok mix package. You’ll typically find three components inside: the hotteok dough mix, the sweet filling (jam mix), and the yeast. Take out all the contents and have them ready.

In a large bowl, combine one packet of yeast with 180 ml of lukewarm water. The ideal water temperature is between 40-45°C (104-113°F), which feels comfortably warm to the touch. A good tip is to mix cold and boiling water to achieve this temperature easily. Stir the yeast and water gently until the yeast is dissolved. Then, add the hotteok dough mix powder to the bowl.

Begin by mixing the ingredients with a spoon or spatula until they start to come together. Once the mixture is somewhat combined, use your hands to knead the dough for about 5-10 minutes. Kneading well until the dough becomes smooth and elastic is key to achieving that wonderfully chewy texture characteristic of chapssal hotteok.

Now it’s time to fill the hotteok! Place the jam filling mix into a small separate bowl. Put on a pair of disposable gloves. Take a portion of the dough (enough for one hotteok) and flatten it into a round shape on your palm. Create a small indentation in the center.
