- 3 Cheongyang peppers
Braising Sauce- 1 Tbsp cooking oil
- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp rice wine (mirin)
- 3 Tbsp oligo syrup (or corn syrup)
- 1 Tbsp sesame oil
- 1/2 Tbsp toasted sesame seeds
- 1 Tbsp cooking oil
- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp rice wine (mirin)
- 3 Tbsp oligo syrup (or corn syrup)

- 1/2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
These are dried saury, a less common dried fish. They have an elongated shape and are quite hard, requiring preparation before cooking. They offer a delightful chewiness and savory flavor when cooked.

To prepare the dried saury, soak them in water for about 1.5 hours until softened. You’ll know they’re ready when you can gently bend them without them breaking. This step is crucial for achieving a tender texture.

Once the dried saury are softened, use kitchen scissors to trim off the tail fin, and dorsal and ventral fins. Then, cut the fish into four bite-sized pieces for easy eating and braising.

Slice the 3 Cheongyang peppers diagonally. Rinse them briefly under cold water to reduce some of their heat, and lightly shake out the seeds. This will add a mild spicy kick without being overwhelmingly hot.

In a pan, heat 1 tablespoon of cooking oil over medium-low heat. Add 1 tablespoon of minced garlic, 2 tablespoons of gochugaru, 1 tablespoon of gochujang, 2 tablespoons of soy sauce, 2 tablespoons of rice wine, and 3 tablespoons of oligo syrup. Gently simmer this mixture for a moment, just until the ingredients combine and form a sauce. Avoid overcooking at this stage.

When the sauce begins to simmer, add the prepared dried saury pieces. Gently toss and coat the saury with the sauce using a spatula, ensuring each piece is well-covered. This allows the flavors to penetrate the fish.
