Main Ingredients
  • 1 bunch Enoki mushrooms
  • 2-3 Eggs
  • 1 Tbsp Pancake mix (buchim garu)
  • 1 pinch Salt
  • A little Black pepper

Cooking Instructions

Step 1

Step 2

Tear the enoki mushrooms into bite-sized pieces by hand. Be careful not to tear them too finely, as they might fall apart.

Step 3

Add 1 tablespoon of pancake mix to the torn enoki mushrooms.

Step 4

Add a little black pepper. If using a plastic bag, shake it to mix evenly. If using a bowl, use a spatula or chopsticks to gently toss the mushrooms so the pancake mix coats them uniformly.

Step 5

Crack 2-3 eggs into a bowl, add a pinch of salt, and whisk to make an egg wash. Adjust the number of eggs based on the amount of mushrooms.

Step 6

Add about half of the pancake mix-coated enoki mushrooms to the egg wash. Mix well to ensure the mushrooms are fully coated. You can do the other half separately or mix it all at once.

Heat a generous amount of oil in a pan over medium-low heat. Spread the egg-coated enoki mushrooms thinly in the pan. Making the pancakes thin will help them cook faster and more evenly.

Cook on medium-low heat until one side is golden brown. Flip and cook the other side until golden brown. Keep an eye on the heat to prevent burning.
