When you crave makgeolli (Korean rice wine), acorn jelly salad is a classic pairing! With Ming’s easy recipe, it’s not hard to make it delicious. Enjoy the wonderful harmony of fresh vegetables and chewy acorn jelly, a simple yet impressive appetizer.
Main Ingredients- 1 block Acorn Jelly (approx. 300-400g)
- 5 Lettuce leaves
- 5 Perilla leaves
- 1 Cucumber (small)
- 1/2 Onion (medium)
- 1/4 Carrot (medium)
Seasoning Ingredients- 1/4 Scallion, finely chopped
- 1 tsp Minced garlic
- 6 Tbsp Soy sauce
- 4 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Plum extract (Maesil-cheong)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds (generous amount)
- 1/4 Scallion, finely chopped
- 1 tsp Minced garlic
- 6 Tbsp Soy sauce
- 4 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 2 Tbsp Plum extract (Maesil-cheong)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds (generous amount)
Cooking Instructions
Step 1
First, thoroughly wash and prepare the fresh vegetables for your acorn jelly salad. Pat the lettuce and perilla leaves dry. Wash the cucumber and carrot well, peeling them if desired. Peel the onion.
Step 2
Cut the prepared vegetables into bite-sized pieces. Tear the lettuce and perilla leaves into large pieces or cut them into 3-4 cm lengths. Slice the cucumber into half-moons or julienne it. Thinly julienne the carrot and onion; this helps the seasoning penetrate better. Cut the acorn jelly into 1cm thick slices, then into bite-sized pieces (about 3cm).
Step 3
In a large bowl, combine all the seasoning ingredients and mix them well to create the dressing. Add the chopped scallion, minced garlic, soy sauce, gochugaru, sugar, plum extract, sesame oil, and sesame seeds. Stir with a spoon until well combined. Stirring until the sugar is dissolved will ensure a smoother dressing.
Step 4
Add the sliced vegetables (excluding the acorn jelly) to the dressing and toss gently to coat them evenly. Finally, add the sliced acorn jelly. Mix everything together very gently to avoid breaking the jelly. It’s important to mix softly so the acorn jelly maintains its texture.
Step 5
Transfer the well-mixed acorn jelly salad to a beautiful serving dish. The combination of fresh vegetables, chewy acorn jelly, and flavorful dressing makes for a fantastic pairing with makgeolli. Enjoy immediately!
