Cooking Instructions
Step 1
First, prepare half a block of firm tofu. Use paper towels or a clean kitchen cloth to thoroughly squeeze out as much water as possible. This step is crucial for preventing the patties from becoming too moist and ensuring a delicious result. Place the mashed tofu in a mixing bowl.
Step 2
Clean and finely mince the 2 fresh abalones. Finely dice the carrot and onion as well. For the kimchi, rinse it under water to remove excess seasoning, squeeze out the moisture, and then chop it finely. This helps reduce its spiciness, making it more palatable for children.

Add the minced abalone, minced carrot, minced onion, and chopped kimchi to the bowl with the squeezed tofu. Now, incorporate the patty seasonings: 0.5 tsp salt, 1 Tbsp mirin, and a pinch of black pepper. Mix everything gently with your hands until well combined. Knead the mixture to ensure the seasonings are evenly distributed.
