Essential Ingredients- 5 fresh abalones
- 30g unsalted butter
- 2 Tbsp cooking oil
- 1 Tbsp soy sauce

First, thoroughly wash the fresh abalones under running water. Ensure no mud or debris remains attached to the shell by scrubbing them meticulously. Using a stiff brush will be most effective.
Step 3
Like clams, abalone has a part called the ‘scallop’ attached to its shell. Using a spoon, carefully slide it between the shell and the scallop. Instead of forcing it, gently detach the scallop using leverage. Be mindful not to damage the shell as much as possible while separating it.
Step 4
After separating the scallop, it’s time to remove the entrails. While the entrails can be used for abalone porridge or other dishes, they are not needed for this butter grill. Separate them cleanly for later use, or discard them if you don’t plan to use them for anything else.

Next, remove the abalone’s ‘beak.’ Look at the back of the abalone’s mouth; you’ll find a convex part. Cut this part with scissors, and the beak will be easily removed. This step ensures a smoother texture when eating.

Now, score the top side of the abalone, the fleshy part. Make crisscross cuts in a diamond pattern. This allows heat to penetrate evenly, making the abalone more tender and presenting beautifully. If scoring is difficult, you can skip this step, but it significantly enhances the texture.
Step 7
When grilling abalone in butter, using only butter can lead to quick burning, making the cooking process more challenging. I solve this by using a combination of butter and cooking oil. Butter alone can easily turn brown and burn at high heat, but using cooking oil alongside it prevents this, allowing for a cleaner and more delicious grill.

In a frying pan, combine 30g of butter and 2 Tbsp of cooking oil. Heat over medium-low heat. Since butter already contains some salt, you likely won’t need to add extra salt for seasoning. Once the butter melts, place the prepared abalone in the pan and grill until golden brown on both sides. Be careful not to let the juices escape as the abalone cooks.
Step 9
If you enjoy garlic, grill whole cloves alongside the abalone. As the garlic roasts in the butter, its aromatic flavor will elevate the taste of the abalone butter grill. When the garlic is nicely browned, and the abalone is almost cooked, pour 1 Tbsp of soy sauce around the edges of the pan. As the soy sauce slightly caramelizes and coats the abalone and garlic, it adds a depth of savory flavor, making the dish even more delicious.
