Making Abalone Seaweed Soup
While beef seaweed soup is delicious, it’s also wonderful to enjoy miyeok-guk with different ingredients! This version features the delightful chewiness of abalone combined with the soft texture of seaweed for a refreshing and flavorful soup.
Main Ingredients- Abalone 100g
- Dried seaweed (miyeok), rehydrated, to your liking
Seasoning & Broth- Soup soy sauce (guk-ganjang) 3 Tbsp
- Sesame oil 2 Tbsp
- Minced garlic 1 Tbsp
- Anchovy sauce (myeolchi aekjeot) 1 Tbsp
- Salt, to taste
- Water 1L

Cooking Instructions
Step 1
First, soak the dried seaweed (miyeok) in cold water until fully rehydrated. Once softened, rinse it thoroughly under cold water and squeeze out any excess moisture. Clean the abalone by scrubbing it with a brush. Then, briefly blanch the abalone in boiling water. If you’re using small abalone, you can use them whole. For larger abalone, slice them into bite-sized pieces. In a large pot, combine the rehydrated seaweed, prepared abalone, minced garlic, soup soy sauce, and sesame oil. Stir-fry over medium heat for about 2-3 minutes until fragrant. This step helps to meld the flavors and release a nutty aroma.
Step 2
Once the ingredients are well stir-fried, add 500ml (about 2 cups) of water and bring it to a boil. As the soup starts to boil, skim off any foam that rises to the surface with a spoon. Removing the foam will result in a clearer and cleaner-tasting broth.
Step 3
After the soup has simmered for a while and the flavors have developed, add 1 Tbsp of anchovy sauce. Then, pour in the remaining 500ml (about 2 cups) of water and bring it to a rolling boil over high heat. Once the soup has boiled sufficiently and the flavors have deepened, season with salt to your preference. If it’s not salty enough, gradually add more salt until the desired taste is achieved. Your delicious abalone seaweed soup is now ready to be enjoyed!
