This Cheongpomuk salad seasoned with crispy seaweed is a perfect side dish for meals and a great accompaniment to drinks!
Main Ingredients- 1 block Cheongpomuk (mung bean jelly, approx. 300g)
- Seasoned seaweed flakes, to taste

Step 1
First, let’s prepare the green onions to add flavor to your Cheongpomuk salad. Wash the green onions thoroughly, trim off the roots, and finely chop them. Then, using the side of your knife or on a cutting board, mince the chopped green onions by pressing down. This helps the dressing absorb better, making it even more delicious!

Now it’s time to prepare the star ingredient, the Cheongpomuk. Cheongpomuk is quite moist and can break easily, so when slicing, use a gentle touch with your knife. Cut it into bite-sized pieces, about 5-7 cm (2-3 inches) long.

We’ll blanch the Cheongpomuk for about 2-3 minutes to achieve a delightfully chewy texture and remove any impurities. Bring a pot of water to a rolling boil, then carefully add the prepared Cheongpomuk. Be careful not to overcook it, as it can become too soft and fall apart.

After blanching, don’t immediately rinse the Cheongpomuk under cold water. Let it drain in a colander until some of the steam has dissipated and it’s just slightly cooled. This step is crucial for enhancing the chewy texture of the jelly and preparing it to absorb the seasonings perfectly.

To the slightly cooled Cheongpomuk, add the salt, fragrant toasted sesame seeds, rich sesame oil, the minced green onions you prepared earlier, and a generous amount of seasoned seaweed flakes for that extra savory kick. Feel free to adjust the amount of salt according to your preference.

Finally, gently toss and mix everything with your hands until the seasonings are evenly distributed. Avoid mixing too vigorously, as this can cause the jelly to break apart. The key is to mix gently!
