Essential Ingredients- 1 fresh blue crab
- 1/5 zucchini
- 1/2 bag of clams (purged of sand)
- 1 potato
- 1/2 green onion stalk
- 1 Korean red chili pepper (Cheongyang pepper)
- 2.5 cups anchovy-kelp broth
Seasoning Ingredients- 2.5 Tbsp doenjang (Korean soybean paste)
- 0.5 Tbsp gochujang (Korean chili paste)
- 2.5 Tbsp doenjang (Korean soybean paste)
- 0.5 Tbsp gochujang (Korean chili paste)
Cooking Instructions
Step 1
First, prepare all your vegetables. Dice the zucchini and potato into bite-sized pieces, about 1.5cm cubes. This size helps them maintain their texture without falling apart during cooking. Slice the green onion and red chili pepper diagonally. If you enjoy a spicier kick, feel free to add an extra Cheongyang pepper.
Step 2
Pour 2.5 cups of the prepared anchovy-kelp broth into a pot. Whisk in 2.5 tablespoons of doenjang, a staple of Korean cuisine, and 0.5 tablespoon of gochujang for a touch of spicy flavor. It’s best to dissolve the pastes thoroughly in the broth before heating to ensure a smooth, evenly flavored soup.
Step 3
Once the doenjang broth begins to boil, add the diced potatoes and zucchini first. Once the potatoes are about halfway cooked, add the cleaned blue crab, purged clams, and the sliced green onion and red chili pepper. Let everything simmer together until cooked through for a rich and refreshing Blue Crab Doenjang Jjigae. Once it comes to a boil, reduce the heat and simmer for another 5-7 minutes to allow the flavors to meld beautifully into the broth.
