Main Ingredients
  • 500g rice tteokbokki cakes
  • 250g fish cakes
  • 1/2 cup mozzarella cheese
  • 20cm green onion
  • 10 slices garlic baguette (optional, adds flavor)

Tteokbokki Sauce
  • 1 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes, fine)
  • 2-3 Tbsp sugar (adjust to taste)
  • 2 Tbsp soy sauce

Cooking Instructions

Step 1

First, prepare 500g of rice tteokbokki cakes. Rinse them under running water two to three times to remove any excess starch and separate any stuck-together cakes. If they are very stuck, a brief soak in cold water can help.

Step 2

Place the rinsed rice cakes into a pot and add 500ml of cold water. Ensure the water covers the rice cakes sufficiently.

Step 3

Turn the stove to medium heat. Add 2-3 tablespoons of sugar first and let it simmer for about 1 minute. This step allows the sugar to coat the rice cakes, making them chewier and giving them a nice sheen.

Step 4

Next, add 2 tablespoons of gochugaru (chili flakes) and a generous tablespoon of gochujang (chili paste). Stir well to dissolve the paste and ensure there are no lumps.

Step 5

Add 2 tablespoons of soy sauce for a savory depth of flavor. Mix all the sauce ingredients together thoroughly.

Step 6

Once the sauce begins to bubble, add the prepared fish cakes (250g). I used fish cakes meant for soup, which had fun shapes, adding an extra element of enjoyment! Let them simmer to absorb the sauce.

Step 7

Add a generous amount of chopped green onion (about 20cm in length). The sweetness and aroma of the green onions will significantly enhance the overall flavor of the tteokbokki.

Step 8

When the sauce starts bubbling again, reduce the heat to low. Let it simmer for a considerable time to allow the rice cakes and fish cakes to fully absorb the flavors. Simmering until the sauce thickens to your desired consistency is key for a rich taste.

Step 9

Ladle the tteokbokki with some sauce into serving bowls. Top generously with about 1/2 cup of mozzarella cheese. Microwave for about 2 minutes, or until the cheese is fully melted and gooey. Your delicious cheesy tteokbokki is ready! Serve warm. Enjoying it with crispy garlic baguette slices makes it even more special.
