Ingredients

  • 3 large eggs
  • 2 slices of cheddar cheese
  • 4-5 stalks of fresh chives
  • 1 pinch of salt
  • 50ml stock (dashi or anchovy stock recommended)

First, thoroughly wash 4 stalks of chives and pat them dry. Finely chop them into approximately 0.5 cm pieces. The fresh aroma of chives will beautifully enhance the flavor of the steamed eggs.

In a bowl, crack 3 large eggs. Add 1 pinch of salt. Since cheese adds saltiness, it’s best to use a minimal amount of salt. Pour in 50ml of warm stock (dashi or anchovy stock works well). Using a fork or whisk, gently beat the eggs until the yolks and whites are well combined. Tear or cut 1 slice of cheddar cheese into small pieces and add it to the egg mixture. Lightly mix it in with a chopstick or whisk; avoid overmixing.

Coat the inside of your earthenware pot (ttukbaegi) with sesame oil. Make sure to coat the bottom and the sides all the way up to the rim. This prevents the eggs from sticking and ensures a beautiful presentation. Carefully pour the prepared egg mixture into the pot.

Evenly sprinkle the chopped chives over the egg mixture in the pot. The chives will blend beautifully with the eggs, adding both color and enhanced flavor.

Place the pot over medium-low heat and cook slowly. To prevent sticking, gently stir the mixture with chopsticks, moving from the edges towards the center. Continue stirring gently until the egg mixture starts to become fluffy and curdled.

Once the surface of the steamed eggs begins to look fluffy, tear the remaining slice of cheddar cheese and place it on top. Immediately turn off the heat. Cover the pot with a lid and let it steam for about 2-3 minutes. The residual heat will melt the cheese into a smooth, rich topping, completing your delicious cheese steamed eggs.
