How to Make Cheesy Potato Croquettes That Kids Will Love!

Ingredients- Breadcrumbs, plenty
- 2 medium potatoes
- 1 egg
- Cheese for melting (mozzarella or cheddar), generous amount

Step 1
First, let’s prepare the star of our croquettes: the potatoes! Peel the potatoes and cut them into 4 or 8 pieces each, depending on their size, to help them cook faster.
Step 2
Place the cut potatoes in a pot, cover them with water, and add a pinch of salt. (Be careful! Too much salt will make the croquettes too salty, so use just a tiny amount.)
Step 3
Once the water comes to a rolling boil, add the cut potatoes and boil for about 10 minutes. To check if they’re cooked, insert a chopstick or toothpick into a potato. If it goes in smoothly, they’re ready to be taken out!
Step 4
While the potatoes are boiling, let’s get the egg ready. Crack 1 egg into a small bowl and whisk it with a fork until smooth. You don’t need to add salt to the egg wash, as the potatoes will already have some seasoning from the boiling water.
Step 5
As soon as the potatoes are cooked, drain them and immediately mash them thoroughly with a wooden spoon or a potato masher while they are still hot. Because we added a little salt while boiling, no extra seasoning is needed for the potato mash.

Allow the mashed potatoes to cool down slightly. Be careful, as they are very hot! Once they are cool enough to handle, spread them out a bit to prepare for filling.
Step 7
Now it’s time to fill the croquettes! Spread the mashed potato thinly and generously fill the center with your chosen cheese. Don’t be shy with the cheese if you love it!
Step 8
Gently fold the potato around the cheese to form a round or oval croquette shape. Using 2 potatoes yielded 3 croquettes, which is a perfect single serving size!
Step 9
Dip each shaped croquette first into the whisked egg, ensuring it’s fully coated. This will help the breadcrumbs adhere evenly.
Step 10
Finally, roll the egg-coated croquettes in the breadcrumbs, pressing gently to ensure they are well covered. Heat oil to 170°C (340°F) and carefully fry the croquettes until golden brown and crispy on all sides. Since the potatoes are already cooked, you just need to ensure the breadcrumb coating is perfectly fried. Enjoy that satisfying sizzle!
