Main Ingredients

  • 1 bowl of warm cooked rice (approx. 200g)
  • 6-7 frozen dumplings (choose your favorite kind)
  • 3 eggs (fresh)
  • 2 slices of processed cheese

Cooking Instructions

Step 1

First, prepare your frozen dumplings. Place them in a microwave-safe bowl, cover with plastic wrap, and microwave for 2-3 minutes. It’s okay if they’re slightly undercooked, as they will be pan-fried later. Any type of dumpling works well, but avoid overly small ones to prevent the filling from falling apart. I used large, meat-filled dumplings for this recipe.

Step 1

Step 2

Once the dumplings are softened from microwaving, finely chop them using a kitchen knife or scissors. If you enjoy the chewy texture of the dumpling wrapper, feel free to include it. Otherwise, you can separate the filling from the wrapper and use only the filling for a softer patty. This step ensures the ingredients mix well.

Step 2

Step 3

While the dumpling filling contains some vegetables, we’ll add fresh ones for a more vibrant texture and color. Finely dice the carrot and onion. Remove the seeds from the Korean green chili peppers (if using) and thinly slice them. Trim the base of the enoki mushrooms, separate the strands, and cut them into short pieces. These fresh vegetables will add nutritional value and enhance the overall flavor.

Step 3

Step 4

Now, let’s make the patty mixture. Combine the finely chopped dumplings and the warm bowl of rice in a large mixing bowl. Add all the prepared vegetables: diced carrots, onions, sliced chili peppers, and chopped enoki mushrooms.

Step 4

Step 5

To bind the ingredients together and form a cohesive mixture, add the 3 beaten eggs. Season with a pinch of salt and a pinch of black pepper to your liking. Mix thoroughly with a spatula or your hands until everything is well combined and forms a moldable dough. If the mixture is too wet, add a bit more rice; if it’s too dry, add a little more egg or water.

Step 5

Step 6

Let’s add cheese for an extra special touch! Keep the processed cheese slices in their plastic wrapper and make cuts to divide each slice into 9 small pieces. This makes them easy to place on top or inside the patties and creates a lovely melted cheese effect when cooked.

Step 6

Step 7

Heat a frying pan over medium heat and add a generous amount of oil. Scoop about a tablespoon of the dumpling-rice mixture and shape it into a small patty. Place the patties onto the hot pan. Cook until one side is golden brown and slightly crispy. Keep an eye on them to prevent burning.

Step 7

Step 8

Once the first side is nicely browned, carefully flip the patties using a spatula. Immediately place one of the pre-cut cheese pieces on top of each patty. Continue to cook the other side until it’s golden brown and crispy, allowing the cheese to melt beautifully.

Step 8

Step 9

These golden and cheesy Mandu-Rice Patties are best enjoyed warm right off the pan. Dip them into ketchup, salsa sauce, or your favorite dipping sauce for an even more delightful taste experience. They make a fantastic snack for kids or a light appetizer!
