Main Ingredients

  • 200g Ground Beef
  • 300g Ground Pork
  • 1/3 Carrot
  • 1/4 Broccoli
  • 1/4 Onion
  • 1/3 block Tofu
  • 1 Egg Yolk
  • 100g Pancake Mix (approx. 6-7 Tbsp)

Seasoning

  • 0.5 Tbsp Salt
  • 0.5 Tbsp Cooking Wine (Optional)
  • Pinch of Black Pepper (Optional)

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Using leftover vegetables from your fridge is a great idea! Lightly blanch the broccoli in hot water and then finely chop it. Finely mince the carrot and onion as well. Chopping the vegetables very finely can help picky eaters not notice the texture, making it more palatable for them.

Place the ground pork (300g) and ground beef (200g) in a bowl. Gently press the meat with paper towels to remove any excess blood for a cleaner taste. A 1:1.5 ratio of beef to pork creates a moist and tender donggeurangttaeng.

Add the finely chopped vegetables to the ground meat mixture. Gently knead and mix everything together with your hands until well combined, like you’re making dough.

Next, add the tofu and egg yolk to adjust the consistency of the mixture. Squeeze out excess water from the tofu by wrapping it in paper towels before crumbling and adding it. Using only the egg yolk makes the donggeurangttaeng extra moist and tender.

Now, add the pancake mix to the dough. Add about 4 tablespoons (approximately 100g) and gently knead it. You can omit the pancake mix if you don’t have it, but a little bit helps prevent the patties from breaking apart and holds their shape better when frying.

Time to season! Since this is for your child, just add a little salt (0.5 Tbsp). My child prefers to taste the natural flavors of the ingredients, so I didn’t add cooking wine or pepper. Feel free to add cooking wine or pepper to your preference.

Now it’s time to cook the donggeurangttaeng. Lightly preheat a frying pan and add a little cooking oil. Reduce the heat to low, then scoop spoonfuls of the mixture and flatten them into round patties. Cook slowly over low heat until the outside is crispy and the inside is cooked through. This low and slow cooking method is key to achieving the perfect texture.
