Ingredients- 1 medium potato, cooked
- 0.5 Tbsp potato starch
- Pinch of salt
- 1 Tbsp water
- 1 Tbsp canned corn, drained
- Vegetable oil (like brown rice oil) for frying
Cooking Instructions
Step 1
First, prepare the potatoes. Wash them thoroughly, then place them in a rice cooker with the steam function or steam them in a steamer until completely tender. You can check for doneness by inserting a chopstick; it should go in easily.

Once the potatoes are cooked, let them cool slightly, then peel them. Mashing them while they’re still warm makes the process much smoother. Use a fork or a potato masher to mash them until there are no lumps.

In the mashed potatoes, add the potato starch (0.5 Tbsp), a pinch of salt, and 1 Tbsp of water. Mix well to form a dough. If the dough is too sticky, add a little more starch; if it’s too dry, add a tiny bit more water until you achieve a soft, pliable consistency.

To the prepared potato dough, add the drained canned corn kernels and gently mix. Be careful not to crush the corn kernels; mixing gently will preserve their delightful ‘pop’ when bitten into.

Now, scoop about a tablespoon of the dough onto a pan and place your desired amount of cheese on top. Shredded pizza cheese or mozzarella works wonderfully here. Gently cover the cheese with a bit more dough to form a pancake shape.

Heat a frying pan with a generous amount of vegetable oil over medium-low heat. Carefully place the formed pancakes in the hot oil and fry until golden brown on both sides.
