Let’s use these crowd-pleasing sweet potatoes to create a special baked dish filled with warm, melted cheese. The fantastic combination of a slightly crispy exterior and a moist interior of sweet potato, along with gooey, stretchy cheese, makes it an excellent snack for kids, a hearty breakfast, or a leisurely brunch. Introducing a simple yet thoughtfully prepared special sweet potato dish.

Ingredients

  • 500g sweet potatoes (about 3 medium-sized)
  • Mozzarella cheese, desired amount
  • Nuts (walnuts, almonds, etc.), desired amount
  • 8 Tbsp rice flour
  • 70ml milk
  • 1.5 Tbsp cooking oil (for dough)
  • Honey, a little (for finishing)

Cooking Instructions

Step 1

First, peel the washed 500g of sweet potatoes (about 3 medium-sized) and cut them into bite-sized pieces (about 2-3 cm thick).

Place the cut sweet potatoes in a steamer basket with boiling water. Cover and steam for about 10 to 15 minutes until tender. They are done when a chopstick can easily pierce them.

Transfer the steamed sweet potatoes to a bowl. While still warm, mash them thoroughly using a mashing tool (like the back of a spoon, a potato masher, or a spatula) until smooth with no large lumps.

Add 8 Tbsp of rice flour and 70ml of milk to the mashed sweet potatoes. If the sweet potatoes are sufficiently sweet on their own, you don’t need to add sugar. However, if they are less sweet or you prefer a sweeter taste, you can add a little sugar to your preference.

To retain a nice texture, roughly chop the nuts. You can use a mortar and pestle or a similar tool; avoid using a blender as it can turn them into powder.

Add the roughly chopped nuts to the sweet potato mixture and mix well. For added color, I also added a bit of paprika powder from my fridge (optional).

Once all ingredients are combined, knead the dough with your hands until it becomes pliable and holds together. To prevent sticking and achieve a smooth consistency, lightly coat the outside of the dough with 1.5 Tbsp of cooking oil while shaping.

(Tip) If you are using processed square cheese slices, you can finely chop them and use them instead of mozzarella cheese.

Take portions of the dough (about 50g each) and flatten them into round patties.

Gently press the center of each flattened patty to create a well. Fill this well with your desired amount of mozzarella cheese.

Carefully pinch the edges of the dough together to enclose the cheese completely, ensuring it won’t leak out during baking. Seal it well.

Gently shape the filled patties with your hands into round or slightly flattened shapes, ensuring they are uniform in appearance.

Lightly oil a preheated pan and place the prepared sweet potato cheese patties on it. Cook over low heat, turning them frequently to ensure they turn golden brown on both sides without burning. They don’t need to cook for a long time to be done.

Flip them occasionally to cook the exterior until it’s a delicious golden-brown color and the cheese inside is melted and gooey. They are ready when the cheese is slightly melted and oozing.

Once cooked, brush a little honey over the top for a touch of sweetness and shine, and sprinkle a few black sesame seeds for garnish.
