Inspired by a mukbang YouTuber’s cheese-themed feast, I prepared a special spread for ‘Yellow Day’ and ‘Cheese Day’! I used melted cheddar cheese as a sauce for frozen mentsu katsu and shrimp cutlets, and also made a super simple ‘Cheesy Anchovy Kimbap’ by adding spicy stir-fried anchovies and kimchi. The theme of the day is yellow and cheesy! Here are the Cheesy Anchovy Kimbap and shrimp cutlets and mentsu katsu topped with cheese sauce. ^^
Ingredients for Cheesy Anchovy Kimbap- 6 slices Cheddar cheese
- 3 Frank sausages, halved
- 2 strips Pickled radish (danmuji)
- 10g Wheatgrass (or other sprouts)
- Spicy stir-fried anchovies
- Kimchi stir-fried with ham and sausage
- Seaweed sheets (for kimbap or any dried seaweed)
- Warm cooked rice
Ingredients for Shrimp Mentsu Katsu with Cheese Sauce- 1 Shrimp cutlet
- 1 Mentsu katsu
- 3 slices Cheddar cheese
- Salad greens, as desired
- 4 Tbsp Tonkatsu sauce
- 1 Shrimp cutlet
- 1 Mentsu katsu
- 3 slices Cheddar cheese
- Salad greens, as desired
- 4 Tbsp Tonkatsu sauce
Cooking Instructions
Step 1
We’ll be making a total of 3 kimbap rolls. Each roll will use two slices of cheddar cheese, so you’ll need 6 slices in total. Prepare the wheatgrass for a touch of green, pickled radish, frank sausages cut in half, and the spicy stir-fried anchovies and kimchi stir-fry with ham and sausage.
Step 2
I ran out of kimbap-specific seaweed sheets, so I used regular dried seaweed (dol-gim). Although it has many small holes, the sticky rice helped it hold together without tearing. Spread a thin, even layer of warm rice over the seaweed sheet. Then, layer 2 slices of cheddar cheese on top of the rice.
Step 3
Arrange the prepared ingredients – stir-fried anchovies, kimchi, sausage, pickled radish, and wheatgrass – over the cheese. Then, roll the kimbap up tightly, pulling the seaweed firmly to ensure a compact roll. Don’t be afraid to pack the fillings in!
Step 4
When you slice the kimbap, you can see the large sausage and the golden cheddar cheese beautifully encasing all the other ingredients. The cheese will look wonderfully melty and delicious.
Step 5
Arrange the finished Cheesy Anchovy Kimbap neatly on a plate. Thanks to the spicy anchovy and kimchi stir-fries, these kimbap rolls are savory and addictive without being too greasy. Even those who aren’t typically fans of cheese kimbap will likely enjoy the spicy kick. Since we’re serving this with shrimp cutlets and mentsu katsu, I made the kimbap rolls thinner with less rice, making them perfect for a satisfying bite.
Step 6
Now, let’s prepare the main dish: the cheesy shrimp and mentsu katsu! Tear 3 slices of cheddar cheese into a microwave-safe bowl, cover with plastic wrap, and microwave for about 4 minutes. The cheese will melt into a luscious, flowing sauce. (If you have a larger amount of cheese, you can also melt it gently over low heat in a saucepan.)
Step 7
Arrange fresh salad greens attractively on a serving plate. If you had honey mustard, its yellow color would have been a lovely addition! Today, we’ll artfully drizzle mayonnaise and ketchup in a zigzag pattern. Cook the shrimp cutlets and mentsu katsu in an air fryer at 180°C (350°F) for 15 minutes until golden and crispy.
Step 8
Pour the warm, gooey cheddar cheese sauce, freshly microwaved, generously over the fried shrimp cutlets and mentsu katsu. Drizzle some extra cheese sauce over the salad for an enhanced presentation. Be sure to pour the sauce while it’s still hot and molten!
Step 9
Finally, add the tonkatsu sauce for an extra layer of flavor. Instead of pouring it directly onto the dishes, artfully arrange it around the plate to complete the visually appealing ‘cheesy, yellow’ look. The combination of the rich, melty cheese and the savory, sweet, and salty tonkatsu is truly fantastic. The cheese drizzled over the salad is also a delightful treat.
