Main Ingredients- 22 frozen shrimp
- 2 stalks scallions
- 2 eggs
- 1/8 small onion
- 1 pinch salt (approx. 0.5g)
Cooking Instructions
Step 1
Briefly blanch the frozen shrimp in boiling water for about 20 seconds. Avoid overcooking, as it can make the shrimp tough. Drain the blanched shrimp and set aside.
Step 2
In a bowl, crack two eggs and add a pinch of salt. Whisk the eggs thoroughly until smooth and no lumps remain.
Step 3
Finely chop the scallions and mince the onion very finely. Add about 4 tablespoons of the beaten egg mixture to the chopped vegetables. Ensure the mixture has enough consistency for the ingredients to adhere well.
Step 4
Lightly coat the blanched and drained shrimp with a thin layer of frying powder. Next, dip the coated shrimp into the beaten egg mixture, letting any excess drip off. Carefully transfer them to a pan, ready to form the heart shape. Once this step is done, you’re nearly finished!
Step 5
Preheat a pan over low heat. Gently place the egg-coated shrimp onto the pan. Arrange two shrimp so their ends meet to naturally form a heart shape. Fill the spaces between the shrimp with the prepared scallion, minced onion, and egg mixture. Once filled, increase the heat to medium or high and cook until golden brown. Enjoy your crispy outside, tender inside Heart Shrimp Fritters!
