This ‘Egg and Chive Jangjorim’, also known as ‘addictive marinated eggs’, is incredibly easy to make and dangerously delicious, making you want to finish a whole bowl of rice. We’re sharing the recipe for this side dish that’s not too salty and packed with umami flavor, perfectly infused into soft boiled eggs and fresh chives. Main Ingredients

  • 8 eggs
  • Pinch of salt (for boiling eggs)

Marinade

  • 1 Tbsp plum extract
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp anchovy sauce (for extra umami!)

Cooking Instructions

Fill a pot with plenty of water, add a pinch of salt and a splash of vinegar. Once the water comes to a rolling boil, carefully add the 8 eggs. Boil for exactly 6 minutes and 30 seconds to achieve a perfect soft-boiled texture with a runny yolk. Immediately transfer the boiled eggs to ice-cold water to cool them down; this helps the shells peel off easily.

Wash the chives thoroughly and drain any excess water. Finely chop them into approximately 0.5cm pieces. The freshness of the chives will greatly enhance the flavor of the dish.

Peel and finely mince the 1/2 onion. Remove the seeds from the 3 Korean green chilies and 1 red chili pepper, then mince them finely to add a spicy kick and vibrant color. Finely chop the white part of the green onion for added aroma.

Add 200ml of soy sauce, 0.5 Tbsp of oligosaccharide (adjust sweetness to your preference), 1 Tbsp of plum extract (for depth of flavor), 1 Tbsp of sesame oil (for nuttiness), 1 Tbsp of toasted sesame seeds (for texture and aroma), and 1 Tbsp of anchovy sauce (for an explosion of umami!).
