Essential Ingredients- 1 bag cleaned hard clams (about 200-300g)
- 1 bag cleaned small clams (about 200-300g)
- 1.5 Tbsp minced garlic
- 3 cups anchovy-kelp broth (approx. 600ml)
- 1 stalk green onion (scallion)
Optional Ingredients (For Extra Flavor)- 1 egg (optional, from Man-ke de Recipe)

Cooking Instructions
Step 1
Rinse the clams thoroughly under running water to remove any dirt or debris attached to the shells. For an even cleaner taste, soak them in lightly salted water for about 30 minutes to purge any sand. After purging, rinse them again before use.
Step 2
Pour the anchovy-kelp broth into a pot. Add the minced garlic and all the purged clams. Bring to a rolling boil over high heat.
Step 3
Once the soup boils, gently skim off any foam that rises to the surface using a spoon. This step helps create a clearer and cleaner broth. Add the sliced green onion and continue to simmer for another 2-3 minutes, or until all the clams have opened their shells. Your refreshing and delicious clam soup is ready! (If using the optional egg, whisk it and pour it into the soup when the clams are almost cooked.)
