Cauliflower Tofu Salad with Black Sesame Dressing
A Refreshing Summer Salad with Cauliflower, Tofu, and a Delicious Black Sesame Dressing
I recently made a tofu black sesame dressing that turned out incredibly delicious! Inspired by its amazing flavor, I decided to create a salad featuring cauliflower and tofu, ingredients that pair wonderfully with it. This salad is a delightful combination of fresh, crunchy cauliflower, creamy tofu, and a deeply savory, nutty black sesame dressing. It’s a perfect, healthy, and satisfying dish for warmer days.
Salad Ingredients- Firm Tofu 100g
- Cauliflower 100g (trimmed and cut into florets)
Dressing Ingredients- Tofu 50g (drained)
- Ground Black Sesame Seeds 1 tsp
- Mayonnaise 2 tbsp
- Yogurt 1 tbsp
- Lemon Juice 1 tsp
- Salt 0.5g (a pinch)
- Honey 1/2 tsp
- Tofu 50g (drained)
- Ground Black Sesame Seeds 1 tsp
- Mayonnaise 2 tbsp
- Yogurt 1 tbsp
- Lemon Juice 1 tsp
- Salt 0.5g (a pinch)
- Honey 1/2 tsp
Cooking Instructions
Step 1
First, prepare the black sesame seeds for the dressing. You can use pre-ground black sesame powder or grind whole seeds yourself until very fine. Measure out 1 teaspoon of the ground black sesame. This ingredient will provide a rich, nutty depth to the dressing.
Step 2
For the dressing, use 50g of drained tofu. For the salad, take 100g of tofu. Place the salad tofu in boiling water and blanch for just 1 to 2 minutes. This step helps to remove any raw tofu taste and achieves a softer texture. After blanching, cut the tofu into bite-sized pieces.
Step 3
Place the blanched tofu in a bowl and mash it using a fork or a potato masher until smooth. If you prefer a silkier texture, you can also press it through a sieve. Adjust the mashing consistency according to your preference for chunky or very smooth tofu.
Step 4
To the bowl with the mashed tofu, add the dressing ingredients: 50g of drained tofu, 2 tablespoons of mayonnaise, 1 tablespoon of yogurt, and 1 teaspoon of lemon juice. Mix everything thoroughly until well combined and no lumps remain.
Step 5
Finally, add the ground black sesame seeds (1 tsp), a pinch of salt (0.5g), and 1/2 teaspoon of honey to the dressing mixture. Stir again until all ingredients are fully incorporated. Taste and adjust sweetness or saltiness if needed. Your delicious black sesame tofu dressing is now ready!
Step 6
Rinse the fresh cauliflower thoroughly under running water. For an extra clean, soak the cauliflower florets in water with a tablespoon or two of vinegar for about 10 minutes. Rinse again afterward to remove any residual vinegar or impurities.
Step 7
After washing, cut the cauliflower into manageable, bite-sized florets. It’s best to trim away the thick, tough core and only use the tender flower parts for a pleasant texture.
Step 8
If you have any leftover prepared cauliflower that you won’t be using immediately, store it in an airtight container or wrap it tightly with plastic wrap and refrigerate. This will help maintain its freshness.
Step 9
Bring a pot of water to a rolling boil. Add the prepared cauliflower florets and blanch for approximately 3 minutes. Avoid overcooking, as you want the cauliflower to remain crisp-tender. Immediately drain and rinse the blanched cauliflower with cold water to stop the cooking process and preserve its texture.
Step 10
Now it’s time to assemble your salad. Arrange the blanched tofu and cauliflower florets attractively on a serving plate. Generously drizzle the prepared black sesame tofu dressing over the salad. You can also serve the dressing on the side for dipping. Enjoy your healthy and flavorful Cauliflower Tofu Salad!
