  • 1 small carrot

Seasoning Ingredients

  • 1.5 cups water (approx. 300ml)
  • 2 Tbsp soy sauce
  • 1 Tbsp xylitol (leveled)
  • A pinch of sesame seeds
  • A pinch of black sesame seeds

Cooking Instructions

Step 1

First, measure out 1 cup of walnuts and rinse them thoroughly under running water. This step helps to remove any surface impurities from the walnuts.

Place the rinsed walnuts in a pot, add water, and blanch them briefly. Boiling the walnuts this way helps to reduce their slightly bitter taste, resulting in a smoother and more nutty flavor.

While the walnuts are blanching, wash the carrot clean. You can choose to peel it or leave the skin on, depending on your preference.

Cut the prepared carrot into pieces similar in size to the walnuts. Cutting them too small might cause them to break down during cooking, so aim for bite-sized pieces.

After blanching, drain the walnuts and rinse them again with cold water. Now, in a pot, combine the walnuts, 1.5 cups of water, and 2 Tbsp of soy sauce. Bring to a simmer over medium-low heat and let it cook until about half of the liquid has evaporated.

When the soy sauce mixture has reduced by half, add the prepared carrots and 1 Tbsp of xylitol. Now, increase the heat to medium and stir frequently as it simmers. This allows the seasoning to coat the carrots and walnuts evenly and for the sauce to thicken. Xylitol offers a clean sweetness and dissolves quickly, making it a good alternative to sugar.

Continue to cook until the sauce has almost completely reduced, leaving a nice glaze coating the ingredients. It’s important to stir occasionally to prevent the sauce from sticking to the bottom of the pot.
