Caprese Sandwich with Pesto
Make a Pesto Caprese Sandwich Easily Using Your Rice Cooker
This sandwich is so satisfying, you’ll feel full after just one bite!
Ingredients- 2 slices of bread
- 2 Tbsp pesto
- 1/2 fresh tomato
- Mozzarella cheese (enough to cover tomato)
- Pinch of salt (half a pinch)
Cooking Instructions
Step 1
Start by taking two slices of bread. Spread 2 tablespoons of pesto evenly on the inside surface of each slice. (If you’re using homemade pesto, using slightly coarser ground nuts will enhance the flavor!)
Step 2
Thinly slice 1/2 fresh tomato into approximately 5mm thick rounds. Arrange the tomato slices neatly on one of the pesto-spread bread slices. Sprinkle about half a pinch of salt over the tomatoes to enhance their flavor.
Step 3
Cut the mozzarella cheese into slices of about 5mm thickness. When placing it on top of the tomatoes, aim to have the cheese slightly smaller than the bread’s edges, about 5mm less, so it sits nicely without overflowing. (Feel free to adjust the amount of cheese to your preference; you can also add more for a richer taste!)
Step 4
Now, place the other slice of bread on top to complete the sandwich. Carefully place the assembled sandwich into your rice cooker’s inner pot. Select the ‘Bread Baking’ or ‘Sandwich’ function (if available) and cook for 10 minutes.
Step 5
After 10 minutes, carefully flip the sandwich and bake for another 10 minutes using the ‘Bread Baking’ function. This process will ensure both sides of the bread turn a lovely golden brown and become wonderfully crispy.
Step 6
When removing the cooked sandwich from the rice cooker, it’s best to use a thin spatula. Gently lift the sandwich out and transfer it to a plate.
Step 7
The melted cheese and warm ingredients will look incredibly appetizing.
